I’m trying to find a supplier of pan head screws, and all I can find are various so-called pan heads which look more like dome heads to me. The style I want has a straight-sided, flat pan head with a slot. Do they still exist?

For an absolutely flat head, with vertical edges you should search for cheese head screws.
Pan head slotted screws are flat but slightly rounded over on the head's perimeter. Pan head Philips screws are usually domed to give the needed depth for the tip of a Philips screwdriver.
Fillister head slotted screws have a very slight dome but square edges. Binding head slotted screws are like fillister heads but the head is larger in diameter. All of these styles are available with machine threads and a well stocked machine shop supply outfit should have what you need.
If you want a coarse threaded screw, commonly called a sheet metal screw, with these less common head types they may not be hard to find or simply not available.

I have been looking for some 6mm X 100mm long (I call) furniture screws. Phillips with a really thin flat flanged head. I call it a flange head. Not sure what they are really called. I think mostly found in stuff from China to assemble chip/mdf stuff. IKEA stuff? They hold things together with a cross dowel. Very thin heads and work very well. The heads are un-obstructive to legs and whatever.
All I could find on the net were from the UK!

Will, the furniture bolts you described are available at Woodcraft, Rockler, Lowe's and Woodworker's Supply. Woodworker's Supply has the best selection. The 100mm P/N is 812-571 but the head in a hex drive not Phillips drive.

Air freight international has improved greatly over the past few years Will.
I spent a few months a couple of years ago filling out my plane collection (have everything except a No1 Stanley, including 4 different maker's No 8s) mostly bought from the USA via eBay, and every single tool arrived in perfect order and promptly.
But expensively!

Hi Will You may well find if the screws you want come from Europe they have No. 2 Pozi-drive not Phillips.The right driver makes a big difference
My young nephew has just spent 2 weeks finishing my new 13 by 4 metre deck (that's about 45 by 14 feet) in 3.6 inch wide tropical hardwood (kwila). 2,500 screws. And he (we) used square-drive stainless screws!
It's laid in a herrigbone pattern, a combination of new and recyled timber, and looks way cool! To be know hereafter as Scott's Deck. Well done Scott.
