I’m looking to make some grooves using my router. I’m at the MLCS website and they have both core box bits and round nose bits. Both types of bits come in the size I’m looking to make. Would there be a reason to get one or the other?
Also, what’s the difference between single flute or double flute round nose bits?

Go to the straight bit page - they recommend certain bits for doing groves...

Measure it with a micrometer, mark it with chalk, cut it with an ax.
Single flute bits have one cutting edge, double flute bits have two. Single flute bits cut faster but leave a rougher finish than double flute bits.
Either core box or round nose will work if you're cutting flutes (grooves with rounded bottoms). If you want grooves with a square profile, you'll need a straight bit.
I prefer the two flute bits - they give a smoother cut.
