As a woodworker with a nut allergy, I have been avoiding most oils and oil/varnishes. I have, however, worked a great deal with walnut (wood) with no effects. Any experience or technical data on what finishes are safe and what isn’t?
Bottom line: Will gloves, respirator, and other safety gear be enough to protect me from potential allergens?

I would consult with your allergist. The oils used in finishes linseed oil (from flaxseed), soya oil (from soybeans) and tung oil (from the tung oil tree (Aleurites fordii). Shellac is animal based, not nut or seed based, and lacquer has petrochemical solvents and a resin based on cellulose (nitrocellulose). And, once oil and resin are reacted to form a varnish, its not really that oil any more. Your allergist can probably tell you about the implications. I wouldn't let this sort of forum be the source for health information.
If putting on finishes can cause you problems then perhaps finding someone else to do the finishing for you is a possibility. Another woodworking friend that you could trade tasks with? You doing their sanding or turning in exchange for finishing for example. Then there isn't any chance of you accidently coming into contact with the finishes until they have dried and are inert.
