I’m building a table top using shop sawn veneers glued to a substrate of 1/2″ baltic birch plywood. My question is; should I also veneer the bottom of the tabletop as well? Buck

I would. But 1/2" for a table top sounds mighty thin....
Yeah,1/2" seems thin butif you glue 1/8" veener on top and on bottom you end up with 3/4" then wrap the top with 1"x 1" edging, for a 23"x14" finished top I think it should be sufficient. Buck
That's good to hear. The strength of this table will not ,however, come from the veneered layers but from the 1" wide edge banding.Without this, the table will flex as though it were just 1/2".May not sound right but this has been my experience in a few mock-ups.
Buck, whatever you do to one side, always do to the other. In this case, if you only veneer one side, you'll probably end up with a nice, concave top.

Is it ok to use a different (cheaper) veneer on the bottom side? In other words, if you used a fancy veneer on the top can you use the same thickness of another hardwood such as cherry or oak on the bottom?

As far as I know, there's no problem with that. At least I've never had a problem with it.
