In preparation for building a set of kitchen cabinets and selecting the right finish, I’ve been looking at some custom cabinet showrooms…several tout a “modified varnish” that is “baked on” and is supposed to be really durable. One guy said you can spill M.E.K. on it and it won’t show a thing (not that I keep MEK in my kitchen). Does anyone know what the modified varnish is and whether it can be duplicated in a small shop?

As Nikki said, only by spraying. But this means more than just having a compressor and spray gun. These finishes--conversion varnishes and 2K polyurethanes have some seriously noxious solvents, so that real spray booth set-up, even closed solvent recovery systems in some cases, might be necessary for safety.
Now a lot of this "baking" and the like is not so your culinary technique won't damage the cabinets, but so they can be very quickly packaged, stacked, and shipped, without need for expensive warehousing. The closest you can come in a hand applied finish is oil based varnish. For spray applications, there are waterborne products that are safe to use with proper protective gear, and give results quite adequate for kitchens, even if they don't quite achieve the bullet proof standard of some commercial finishes.

I would ask for a sample and tell him you have some MEK with you and that you have time to sit and watch....
