I am planning on using tabletop fasteners to attach a glued-up table top to an apron. The fasteners I am using look like Z’s where there is a hole for the screw going into the table top and the other end goes into a slot in the apron. Is there a need to have a fastener attached to each glued-up board? Thanks…

Buzz, no there should be no need. Just run a groove around the inside of the rails and screw the clips in about every 12" or so.
The clips at the end of the table top can be pushed tight against the rail prior to screwing in. The clips at the sides of the table top need a bit of room to expand into the groove. Make the depth of the groove the same as the length of the clips leg.
Just make sure you avoid putting a screw directly into the glue line of the top. Screws mistakenly placed there can occasionally cause the joint to fail. Slainte.

I have actually decided to screw directly into the wood from beneath since I have an existing metal frame. But I'm going to elongate the screw holes in the direction perpendicular to the grain so that this will allow for movement of the boards. I was originally going to use a sub-base but decided against it. Thanks...Regards,
