I have made a couple of pieces of G&G style furniture in the style you have developed (a desk and lamp stand). I started these after admiring the photos of your work but before your book came out so I had to develop my own ideas about how the insides looked. I used carpenter buttons to attach the tops.
What method of attaching the tops do you employ on your tables?

I am not sure what Carpenter buttons are?
To attach a solid wood top in a way that allows for expansion and contraction I like to use "Tabletop Mounting Clamps" available at Lee Valley. I find them much easier to use than" figure 8's ". I usually use my lamello machine to cut the kerf that they fit into or you can just as easily run a kerf on the table saw before assembly.
For big tables they are available in larger sizes from other suppliers.
