i wish to use polyoil on the table top to bring out the grain, but i want to finish it with numerous coats of water based polyurethane. are these materials compatable?

What exactly do you mean by polyoil?
I will proceed on the basis of my best guess which that you have in mind a mixture of oil and varnish. The answer is yes, you can proceed that way, but you should give plenty of time for the oil/varnish mix to cure before applying any waterborne finish. If the over coat time is 24 hours, give it at least 72 hours to cure, assuming a relatively warm (70° F) environment. Wiping down the surface with denatured alcohol would also be a plus. For even greater surity of compatability, you could apply a single coat of dewaxed shellac before applying the waterborne finish.
You should check with the manufacturer of the specific waterborne acyrlic finish that you plan to use to deterimine whether there is a maximum film thickness that is recommended. On some finishes, more is not better than less.
