I recently acquired a couple of slabs of spalted silver leaf maple. The
surface is slightly softer than if it were not spalted. Do you have suggestions for how to work with this?

Yeah spalting is rot. Gorgeous rot but rot nevertheless. Wear a mask if you do any sanding on the stuff. Spores and all.
I would use the maple for panels in any frame and panel situation. Keep them a bit thicker for strength. You could try planing them but I suspect sanding will be your best option. Remember the mask. Good luck. Gary
