I recently glued up a couple of veneer projects and used clear packing
tape to prevent glue squeeze out from getting on the finished surface
but when pulling off the tape the adhesive from the tape was left on
the veneer face wondering if there is a solvent i can use to clean the
adhesive off because i do have to stain these surfaces afterwards.
can anyone recommend the right product?

I've used Goof-Off and mineral spirits to remove glue residue. When the residue is gone and the wood is dry, a light sanding with 220 should eliminate any sign of the tape.

First of all try a fresh piece of tape, lightly touching the adhesive side of the new piece to the leftover adhesive, sort of a dabbing motion, often times this will pull away the remainder on the veneer.
A sharp, lightly wielded, scraper will often work, but this depends on the qualities of the adhesive, sometimes it will scrape off and sometimes it will smear.
If that fails you can try a solvent but there is a fair chance that some of the dissolved adhesive will end up trapped in the wood and show up when you apply a finish. I prefer to use naphtha, you can buy it in a small squeeze bottle as Ronson lighter fluid that is easy to handle.

Can't say I've ever done what you have but this removes adhesive with no ill effects to lumber. Available at auto parts and auto body suppliers, except maybe in California. They also have a citrus based product but I haven't used it.

I second hammer1's suggestion of Three M Adhesive Remover. It's made for just what you need. I use it to remove double-faced carpet tape from templates and the work they're attached to.
You can find it at any good automotive paint store.
It's been a while since I've bought any, but the $17+ price on EBay seems awfully high for a quart of the stuff.

There's a product called Re-solv-it--comes in a little bottle that I'll bet is available at any hardware store or Walgreen's.
