Can someone suggest some simple ways to relax glue joins (Hide I think) on large pieces that need to be completely taken apart?

Moist heat will work wonders on hide glue. Hot vinegar works on most white and yellow glues. In both cases, have patience: work slowly so you don't damage the wood fibers by forcing a joint open before the glue has had a chance to dissolve.
Hide glue will stick to itself - you don't have to remove every remnant of old glue before you can apply more. As far as I know, this isn't true of any other glue.
