In the past I’ve always used a water based polyurethane (MinWax Polycrylic) on my maple projects. Over time I’ve noticed anything exposed to direct sunlight seriously yellows. Is there a clear finish out there that doesn’t do this?

Absolutely ! I use Fuhr brand waterbased products alot and they will not yellow. Contact the local distributor to you at http://www.fuhrfinishes.com and they can help you out. I use their products almost exclusively in my shop now. I am very pleased with the product. If your local distributor doesn't give you the help you are looking for and want to talk with one who can call Randy States in Tenessee (the only distributor on their web site with a red dot) and I am sure he can assist you. I wonder if it's the finish that's yellowing or the wood? Maple will oxidize and turn yellowish with time and direct sunlight speeds the process up a lot.
The only way to combat the effect is to use a finish that contains UV inhibitors. And the finish itself has to be water clear and non-yellowing. But UV inhibitors don't last forever and the best way to avoid the problem is to avoid direct sunlight.
I've used a number of brands of water-base finishes and the last switch I made was from Fuhr to Target Coatings. I've been pleased with the finishes from Target and haven't seen a need to switch again. You can check out their website at this link - http://www.targetcoatings.com
