Regarding Pat Warner’s video using spacers for router cuts would the bolt on the table be adjustable to make wider cuts. It appears on the video that the piece being cut would stop at the bolt not letting the work piece cut all the way through?

When you have the spacers against the fence, the "alignment peg" protrudes horizontally. Obviously, you would need to pass your board under the peg. It looks to me that the peg is a few inches above the tabletop. So as long as your stock is less than this dimension, you are good to go.
Most jigs do not work in every situation. If you had to pass a vertical board edge against the fence that interfered with the peg location, you would have to improvise or change the design if you find this is something you need on a regular basis.
Is this a hypothetical question, or do you have specific need for a different design?
