I’ve heard about “modified varnish” on commercially finished cabinetry. It’s supposed to be impervious to all kinds of damage, including water, alcohol, MEK, you name it. Is there any way of duplicating such a miracle finish in the home shop?

The finish you are speaking of is a conversion varnish. It is a commercial product that is known to resist everything but nuclear attack!!
It is a specialized product that calls for spray equipment and very good respirators for personal safety.
A good oil based varnish like Behlens Rockhard will give you a very strong serviceable finish that will serve you very well. You'll be impressed with the finish it produces.
It can be mail ordered from Homestead Finishing Products, Woodworkers Supply and Woodcraft to name a few.
