I want to mirror the backs of existing open cabinets
that hold shelving to compliment the bar I just built.
The mirror store suggested 1/4″ thick mirror and charges
$150.00 to install. I think 1/8″ mirror will be more than
sufficient and I think installation should be easy for me to
do using 3M double sided tape. I don’t want to use glue in the event
I someday wish to remove the mirror. Is my thinking right here or am
I missing something? Help appreciated

1/8 inch is more than enough but thicker usually means flatter
try self adhesive velcro strips, i use them all the time for removable parts
caulking is not a piece of trim
Hold it in with molding around the edge. If you glue to the back you can sometimes peel off the paint and mirror coating. Unless they're mirror tiles that are designed to be held up with foam tape.
You don't say how big the panels will be, but 1/8 inch is fragile stuff as the sheet size gets larger, it will easily crack under its own weight if it isn't evenly supported while it is being installed. Also 1/8 is easily twisted if it is unevenly mounted, giving you a fun house mirror effect.
I would strongly recommend against using double sided tape to mount the panels. You will break the glass long before you get the tape to release its hold. I think the glass guys are giving you good advice, not just trying to charge you more.

The panels are about 60" high by 30" wide.
How about the post that suggested velcro?
Sounds like a pretty good idea. You may have
convinced me to go with 1/4" mirror. What do you
think about the self adhesive backed velcro?

I agree with the velcro idea. A client had a large mirror (about 50"x40"x1/4") installed on the back side of a 2 sided entertainment center I built. I created a lipped projection - kind of a 1" wide shelf that supported the weight. The mirror installers used velcro since the mirror had to be removed to access the back of the stereo components.
I'm not an expert but it seems to me that some velcro strips mounted vertically would be strong enough to hold the mirror but would release before breaking the glass or ruining the mirror.
