I’m building doll house bookcases from eastern pine. When painting the wood white and then applying a polyurethane sealer, all the knot holes eventually yellow and show through the white paint. Is there anything I can do to eliminate this defect from showing on painted pine?

Shellac does a great job of sealing the knots on pine. When painting, use a white pigmented shellac based primer on the bare wood, sand smooth (sands easily), remove the dust, and apply your paint.
I've used the Zinnser white shellac primmer on a number of pieces and it worked great.
