Anyone out there using one of these critters? I’m especially interested in sharpening carving knives and gouges, as well as chisels. An honest assessment of this system would be greatly appreciated.

I too would like to hear comments from users. I own one, but have not done much sharpening with it as yet.

Since there aren't any other, I'll tell you my experience. I have seen the same woman doing demo's of this tool in Detroit, Atlanta, Denver and various cities in CA over the last several years I travel a fair bit and try to go to shows whenever I'm in the right town at the right time. She is fun to watch.
Anyway, I asked if I could try to use the tool right there when she wasn't doing a demo. She told me to come back at the end of the day. I purchased a chisel at Peachtree in the next aisle and I bounced it off the concrete floor until it was chipped and in need of grinding and sharpening. Then I went back to her booth at the appointed time. After 15 minutes with my damaged chisle I can tell you I'm not steady enough to use it free hand the way she did. It was sharp but not straight and flat. If I bought it I would have to design and build a jig of some kind. She assured me I would get better at it after a few hours practice, I decided to pass. I did see her again in Detroit earlier this month and I said "hello," but still didn't buy.
Thanks for your input. After seeing the girl you are speaking of in a promotional video, I would make it a point to stop at their trade show booth regularly.
