I’ve heard of a dressing product, and I’ve heard of Johnsons floor wax… after investing in all these tools with cast iron tables (drill press, table saw, etc.) how can I sleep at night knowing that the ugly rust demon isn’t in my shop eating away at my shiny new surfaces?

There are many discussions on this subject. Search for rust prevention or just rust.
I have used a few of the "best" products on the market. None of them lasted longer than a few weeks, mabey a month, before light rust showed. At the recomendation of those here I used paste wax. It is easy to apply and lasts much much longer.

I've been using good ole' Johnson's Paste Wax for years. It won't work well if you sink your tools in a lake (like in the FWW test), but a nice wipe down every 2 weeks or so will give you terrific results, and makes your stock slide a little easier, too. T-9 Boeshield also is fantastic, if you want to spend the extra money.

As others have said, use a furniture wax (instead of automotive wax).If your shop is in the basement, it will help matters considerably if you run a dehumidifier during the humid months.
