I have to have a large ( 28″DIA) Ash tree cut down. If this wood is a good choice for a workbench (Ruobo style)
how should I have it cut?
Six inch thick quartersawn, 2″ thick quartersawn ( easier drying), 6×6 timbers 3×6 boards?
My sawyer says he cannot kiln dry a 6″ thick piece and that it will never air dry completely

I would say get it cut into boards which will yield 2" thick when planned all square after drying. This will give you a nice, thick, heavy worktop to use and also allow you to maximise the amount of wood you can get out of the tree.
As long as the joinery is done well it should be sturdy and heavy enough to take some serious abuse. Just make sure you put stretchers in to spread any racking load from one leg to the other.
