I am making paint grade doors from 1 1/2″ poplar, 3 panel to match existing doors in an old farm house. I would like suggestions for a glue to use in the mortise and tennon construction. I have used Titebond waterproof so far for panel glue-up, because of it slower set-up time. Any other suggestions will be appreciated.

Use any PVA yellow glue. In fact, use what you used to glue the panels.
I use epoxy more regularly than most woodworkers. For small jobs like the mortise and tenons for a single door, which you describe, the one-ton stuff that comes in the small double tubes works just fine. I use epoxy mostly for the long set up time but it's also water-proof and the amber color doesn't telegraph through a clear finish if you miss a few flecks in the clean-up.

Does the epoxy that you use have a short shelf life once it has been opened?
Epoxy cures by the interacation of the two components. If you keep the two components apart, the adhesive can last for more than a year.
Be careful however with the two side by side injection dispensers. The two components can come together when you reapply the cap. This can cause the material to cure in the spout. I generally wipe off the tips using lacquer thinner or acetone before putting on the cap.Howie.........
I usually use a urea formaldahyde glue when doing paint grade work. It is waterproof and the seams will not "telegraph" through the paint (something that often happens with any PVA). It has a very slow set-up time so you always have lots of time to get things squared up and clamped.
