The FWW article by Mario Rodrigeuz says to use a “dark” glaze over the shellac on the edges and moldings of the mantel. I have a couple of questions about this. First, how much sense does it make to use a jell stain for the glaze instead of mixing it yourself? If I do use a jell stain what color would you recommend – dark walnut?
Also, I guess if I do mix the glaze myself, I just experiment until I find a color I like.

"Dark" is a rather generic term.
Many people like gel stain because they have no experience with glazing and it removes the fear factor.
If you have experience with glazing try both ways.
Sorry I can't recommend any particular gel color as I don't use them.
To accentuate the moldings try a combination of burnt and raw umber in your glaze. If you want the color to be a little warmer and richer, use more burnt than raw.
If you are looking for a more "dirty" or "cool" color, use a higher proportion of raw umber.
I use these two colors in conjunction with each other all the time.
