I have an 18” Rikon bandsaw and the table is slightly dished in the front (about 2-3mm) even with the alignment screw fully tightened. I would like to try to flatten the table. I’m not sure if the table is steel or cast iron, but either way, what would be the best method to flatten it? Angle grinder? Belt sander? Other? Should I even be concerned about this amount of dish?

Is it a new saw under warranty? First you neeed to find out what is their tolerance standard on a bandsaw table. It will vary from a jointer or table saw. Start with the manufacturer and or where you bought it. They will also require a more specific measurement. If it's 3 mm it sounds like you are beyond the manufacturers tolerance standards.
