Fixing Dovetail gaps with wedges, during or after glue sets
I’m about to glue up my first handcut dovetail drawer. I know there will be gaps between pins & tails and was going to tap in a small wedge to fill the gap.
Is this something that is done while the original glueup is setting, or after the original glue up has cured?

fit to be glued, not tied
If your dry fit shows a gap (or gaps), I'd suggest trying to fix them prior to glue-up. It's much easier to glue on a small stip to a pin, and re-fit the joint prior to final glue-up.
Fixxing dovetails
I, errr, I mean a "friend" of mine fixxes his hand cut dovetails while wet. He's got a bunch of little shims, long tapers, and sawdust that he just sticks into any gaps that may remain from cutting the joints, taht way everything dries up togeather.
Yes, a friend of mine. See, my hand cut dovetails are perfect. They never need fixxing... Yep, that's it! ;)
the shimmerer
Your, uh, "friend" must be able to work much faster than I. ;-)
Yea.... that's the ticket. And you're married to Morgan Fairchild...
