I have a 3 seasons porch that is paneled with redwood. what would you finish it with? In the past I have used Tompson’s watersealer which works great for a couple of years. I was thinking danish oil or linseed oil?

Might want to try Penoifin. Works well on outdoor projects, which your porch almost is, and since it is a penetrating oil and not a film finish, you don't need to strip off the old finish in order to renew it.

Whether you think you can, or you think you can't, you're right.
Any film finish will eventually wear/flake off when subject to the UV in sunlight. You might be able to recoat it, but generally, you have to strip it off entirely.
Which is why I prefer a wipe-on oil in applications such as yours. But as you already know from your experience with Thompsons, you have to recoat every few years.
There are better oils than Thomsons, and I would look for an oil that contains UV inhibitors. Minwax sells one they call "Clear Shield," but there are others.
If you want a little more surface sheen than you can get from an oil by itself, you can add spar varnish to the mix (about 25%), such as Minwax' Spar Urethane (which also contains UV inhibitors). Apply it just as you would an oil alone.
Depending on exposure (to sun), you will have to rub it down and recoat every 4-5 years.
