I have 6 raised panels to finish ( oil stain followed by poly ). All 6 panels have different size pitch pockets in them. They are a little sticky to the touch.
Will the pitch effect the finish? Is there anything I should do prior to finishing?

You can use a heat gun to boil the pitch out as much as possible. If the panels are smaller, you can force the pitch out in a microwave oven. If left, it will seep through a finish, esp if it gets warm.
Shellac can be of help, but with active sticky pitch pockets it won't be enough. Shellac will be "lots" better than oil based varnishes.
