I am new to woodworking and had a question for the experts:
I recently built a coffered ceiling using solid 3/4″ quartersawn white oak boards arranged like a beam with the two side vertical members of the beam protruding 1/4″ below the bottom horizontal member. Therefore the long rip side of the board is exposed.
I have not stained the boards yet because I have a concern that when I do, the grain on the rip side of the board, which is facing down, will be visible and it is plain sawn not quartered.
Can I install a veneer of quartersawn onto the long rip side of the board or will this tend to pull off as a result of the difference between movement of plain and quatersawn material? If so, where can I get edge banding of quartersawn white oak?

Quarter sawn lumber isn't quartered on the edges, edge banding would look unnatural, maybe worse than that down the road. The variation will help break up the repetitive look and highlight the grain in the faces. The natural grain wraps around the edge and a glued on edgeband would show a line at that point.
