I have been reading about and working wood for about 7 yrs. I seen many of the articles on making the parts of doors but very few on designing the sizes of the stiles and rails. is there a specific process/ratios based on door opening size. I have built the kitchen cabinets. now I need doors, both single and double inset format with a flat panel. please help!

There are no standard door dimensions, although efficient use of standard wood sizes does make economic sense. If you are staring out with rough sawn wood then standard dimensions aren't that important since you'll be dimensioning the wood yourself.
Beyond that, the proportions aren't that important, as long as you've got enough wood in the frames to work with the joinery you plan to use, anything that looks good is fine. I'd suggest taking a stroll through a few commercial cabinet displays and note the dimensions of the framing of the units that strike you as well proportioned and pleasing to your eye and use those as a starting point.
