No matter how hard I am careful when making drawers and measurements of the opening I can’t never seem to get through a project without some kind of struggle with drawers. I am using the less inexpensive white drawer slides and wondering why one side sits out proud and the other perfectly flush?

Bigbear ,
Sounds like you are using a basic Euro slide , most are captive on one side , causing the alignment of the face off of the captive side .
If the slides are not equal distance from the face or the opening is out of square the face be racked .
Try shimming the captive slide at the back of the opening in the direction the face needs to move .
