I use a 60 gallon, 3 hp (7 hp of the advertized kind) 9.7 scfm @ 90 psi. Is more than enough. Not portable at all of course, but with enough umph to run a long enough hose to anywhere around the house and yard that I want. Check Jeff Jewitt about minimums. He sells C.A T guns and knows a LOT about them. http://www.homesteadfinishingproducts.com
Check the manual on the gun you have and see what it says are the required CFM for the gun to work. THen get the biggest compressor you can afford that meets that requirement. The pancake and hotdog compressors are much too small to do anything but fill your tires.
Well you asked for it
I came at it from a different angle. I use a separate tank. A manifold with shut off valves and quick connects . Then connect two or three of these as needed. One can be down and you can get by or one can be disconnected for a nail gun outside the shop etc.
Mine rated 7 CFM each.
Just what I tried. Easy to move. Versatile. Expandable. Sounds like an airport when you get 'em all fired up at once.

Ok I'm nuts; I admit it.
PS: A guy I worked with some time ago had one of the standard issue tall jobs. He pulled on the hose while spraying a car and said he pulled the whole mess over on its side while running. Scary. Glad I wasn't there. Run the line to a board mounted to the wall with oil/water filters and regulators on it, what have you. That way can't be pulled over. I know you said HVLP but I am just running with it.
