Friend of mine who works in a shop said a coat of poly he’d applied turned gray when someone turned off the heat when leaving for the night and it got pretty cold- Is this characteristic?

Do you have any idea of how cold it got? I've used poly in the low 40's and it came out fine - although it took for-freaking-ever to dry - lol.
Dave- No, I guess I don't know how cold it got- I've used it in my shop when things were pretty cool, too, and I don't recall anything like it happening- Just wondered if it was one of those things that haven't happened to me "yet"- Thanks for your thoughts-
