I’m building a workbench and the top is a bunch of face-glued hard maple 3/4″ wide. The plans I’m adapting are the Fortune/Nelson bench from the Workbench Book. It shows breadboard play laterally, based on edge-glued boards as a top.
Since my flat-sawn maple will move vertically more than horizontally, should there be play in the mortised breadboard to allow for vertical movement?The end caps are made of laminated maple as well, but perpendicular to the table segments’ grain.

Short answer is no. Assuming the tongue is 3/4 inches or so thick the movement would be quite small.
