It would be Bob Flexner's books Understanding Wood Finishes. Jeff Jewitt also has several books. FWW has a book. But I think Flexner's books are considered the "gold standard".
I agree flexner's understanding wood finishing is an excellent choice but also Jeff Jewitt has some good books out, I have every book that either author has written.
Jeff has a web page where he sells a lot of great products, an he also has a message board on his site where you can ask Jeff any ? an he will get the answer back to you, many times in the same day. anyway back to your original ? you can't go wrong with those two author's, also Charron has a lot of great books if you are interested in spraying which really is the only way to go........
Ditto Gretchen. Great book, Love the fact/myth blerbs. Also a very easy book to navigate through.

I like Flexner as the first book for "Whats" (and mythbusting) and Jewitt's Complete Illustrated Guide to Wood Finishing for profusely illustrated "Hows."
I do have both, but favor Flexner. My Flexner copy goes back.(hardback) and getting well used over the years.Work Safe, Count to 10 when your done for the day !!
