I have not used dye before and now will attempt to dye ash black with water based dye and use solvent base poly for protection.My question. If I dye the wood first I have better control of the color however assembly (which is before poly) could result in damage to the dye. If I dye after assembly I believe that the where the aprons meet the legs would end up saturated with dye and look bad. Any suggestions?

There usually isn't a problem dying after assembly. The secret is applying dye liberally, so that every place gets saturated with dye. That lets the concentration of how the dye is mixed determine the darkness, not whether some parts got less than others.
