An easy finish for this would be one of the very thin varnishes like watco or minwax antique oil.
They are simplicity to use, just wipe them on and wipe the excess off. They will not build up a surface coat like a brushing varnish but that is not what you need for a work bench. Be very careful with the oily rags you generate. Either lay them flat outside or douse them in water.
