I see that I am supposed to post my “other” vote on the woodworking activity that interests me most. I’ve been doing a lot of segmented bowl turning. This activity seems to coax me to use most all the skills needed for fine woodworking — precision, accuracy, proper use of both power and hand tools, finishing, etc. If you haven’t tried making segmented bowls, I suggest you give it a go (providing you own a lathe, of course).

Boy, I've looked at them and jeez they're nice, but in the time it takes to cut assemble and turn a segmented bowl, I could turn a dozen greenwood bowls. Have you ever recorded how long it takes from start to finish? What I like about greenwood bowls is that they are easy to turn - you get long long ribbon shavings - and they settle as they dry creating a truly unique piece. If you haven't tried it, you should.
I just had an inspiration. I am also a power carver. If I glue up all my scraps with gaps between, I can build a giant segmented blank which would yield quite the sculpture. If this every materializes, I'll post the results here.

You're right about greenwood being faster. I need to do a few more of those. And I would really be interested in what results you get from your "spaced" bowl. Thanks for the comments.
