can I use 1/2 in. stock to build a chest to use as a coffee table, or about the size of a old trunck?

Sure -- Why not?
Certainly, half-inch is a bit thin compared to most chests of that size, but it can still be strong and attractive. (This depends, of course, on the species and cut of wood being used, and on the finish.)
Given the half-inch thickness of stock, you should be careful when choosing the type of joints. Some joint types are stronger than others in thin stock -- box joints and dovetails will work very well, as both have incredible strength. Butt joints and rabbets will be considerably weaker, and should be avoided if possible. The good news is that the stronger types of joints are generally considered more attractive too.
Enjoy making it, and post some pictures when you're done.
