I’m in the middle of working my way through my first set of hand cut dovetails… and a big part of the learning curve is sharpening. I’ve got a set of King waterstones… I’ve honed a mirror finish on the bevels and backs of my chisels and they will cut wrist hair with a very, very slight tug that I can feel. I use a honing guide with a wheel that rides on the stone. In an effort to keep things simple, I’m not yet attempting to give the edge a microbevel. I find that the more coarse stones put a nice wire edge on the back of the chisel. As I work my way through the grits — on the bevel only — it seems that the wire edge gets less and less pronounced even though I don’t hone the back of the chisel until the finest grit as the final step. In fact, by the time I get to the finest grit (G4) I can’t feel a wire edge anymore. Is that normal? Why would the wire edge gradually disappear on its own as I progress through the grits? Am I rounding the edge in some way? Thanks for any advice and for an extremely informative forum.

you should take a look at leonard lee's the complete guide to sharpening.
you're bending back the wire edge.
maybe it is similar to trying to cut a piece of coat hanger wire. you bend it one way and bend it back the other way and so on and then the wire finally breaks. work hardening maybe?
having two mirror polished planes intersecting at an angle of 25 degrees or so may have something to do with it too.
This is normal. If you go through the normal progression, the wire edge is largely lost, so that by the time you get to the 8000 stone, there is very little wire edge left. Just a few quick careful strokes on the back and you should be good to go.
