Wipe On Poly – between coats – and after sanding – Is it OK to do a quick wipe down with mineral spirits after brushing off the dust? Or just use a tack cloth after brushing off the dust?

I used to use tack cloths, but I now use 3M microfiber cleaning cloths: http://paint-and-supplies.hardwarestore.com/47-248-tack-cloths/norton-micro-fiber-resuable-dry-tack-cloth-108678.aspx
(The ones you find through woodworking suppliers are usually Norton brand, but they're exactly the same as the 3M ones that you can get at the supermarket).
They come in different types, the red Norton ones are equivalent to the ones that you normally find at the supermarket (in multiple colors), and seem to be the best for tack cloth applications.

Those microfiber cloths are great. Just toss them in the wash when they get loaded up. 'never bother with traditional tack cloths anymore.
Since the sanding could only be done after a reasonable amount of cure, a mineral spirit wipe shouldn't harm a thing.
Tack rags are problematic, while almost certainly OK for oil based varnishes, it may be a bad habit, since tack rags can leave residue that would interfer with waterborne finishes.
Mr. Schafer's suggestion also makes sense. After all the object to get rid of dust and that's a pretty effective way also.
