Best solution for walnut sapwood is to leave it in the scrap bin, or work it into the design. You can use aniline dye to color sapwood. Don't get it too dark since the rest of the walnut will tend to lighten, not darken like other woods.
It is tricky to color just the sapwood, and not have the dye or stain wick into the heartwood. That said, check out Van Dyck walnut crystals. It is a dye derived from walnut husks. The color is quite walnut-colored.

Is this something I can buy from Rockler and do i use the dye on the entire board or just apply it to the sapwood? Thanks for the advice.
