I’m finishing a walnut jewelry cabinet. I’ve used Danish oil and wonder if I can use a wipe on poly or something else to give it a little gloss?

Certainly. Once the oil is completely dry you should be able to top coat with shellac, brush or spray-on lacquer or varnish/poly. Unless you are in a hurry, do sample blocks of the oil on walnut and then experiment with the different finishes to find the look that best complements the cabinet. The samples are good to keep for the next time you are contemplating a finish using that particular wood.
