Just wondering how long I should let Watco cure on a cherry wood table top before I give it a coat of oil based poly or varnish? I live in the San Francisco Bay area and the temp is rarely above 75 degrees or lower than 50 degrees right now.

Overnight if it will have much of the time closer to the 75° end most of the time, and extra day or so if closer to the lower end.
Just to be persnickety. Poly (meaning a single part DIY product) is just one kind of varnish not a fundamentally different material. It does have relatively poorer adhesion than the varnishes with only the traditional resins, so using poly it's better to be more conservative about the timing.
Thanks for the reply I understand there is a difference between poly and traditional varnishes. It did not occur to me that there might be a need to wait longer to use the poly over the oil vs. the varnish over the oil. Sounds like it might be a good idea to wait an extra day or two in either case. In the past I have always used either Watco by itself or the varnish or poly by itself. Thanks again for your help.Troy
IIRC: Watco is a blend of linseed oil, mineral spirits, and oil based varnish.
I have applied oil based varnish over it after a few hours.
Not sure on the oil based poly though.
