Pulling a vacuum sucks evaporated moisture as well as air out of the bag. But in general, the moisture from glue first migrates into the wood, and then evaporates from there.

I agree with Steve's comment. I would add that you should remove the glue up from the vac bag after about an hour and let it "air out". (when using PVA glues) Failure to do this will delay or inhibit full curing of the adhesive and MAY lead to black spotting. I now wait at least overnight after removing a veneered panel from the vac press before doing any tape removal or sanding.
