I am working on some built-ins for the den. I am thinking about spraying them with white tinted lacquer (for the first time) to finish them. What I was wondering about is after I install them, I will have to run crown molding across the top, baseboard along the bottom, caulk any gaps, etc, and didn’t know if you can touch up these areas with the lacquer using a brush?

I've touched up lacquer by thinning it and working quickly with a disposable brush. It seemed to work pretty well.
I've also used an air brush.

I install mine then the painter does the boxes and moldings caulked to the room , they do the loose parts , doors shelves , drawers and such typically in another location shop or garage .
You can paint the whole job then do as you said touch up and caulk but in my professional opinion for a built in the look is cleanest from painting in place.

that is a real concern for me. I just wonder if it is worth the trouble to spray them then install or just finish them in place.

You can use the brush, but it should be limited to very few spots that are not too obvious. The brush texture will never match he spray even if the color is right. For perfect results, do your base coats in the shop, install, caulk, then spray the final coat in place. I'm not saying I always do it this way, but no question that the results will be excellent.
