I read that you can use oil colors with linseed oil to colorize it. I was wondering if the same theory/practice works for polyacrylic and watercolor paints? Are they the same or similar enough to the tinting agents one buys from rockler or similar woodworking resources?

A water color paint may be miscible with a water based product but the coloring strength would be negligible.
A universal tinting color (UTC) would be one way, a Mixol tint would be another, and better way.
