I find it much easier to lay out 1/4 inch tenons than 3/8 inch tenons. What is the difference in strength between the two?

I don't see why you find it this way as the lay-out is the same. But in terms of strength, a 3/8" thick tenon has 50% more bending strength than a 1/4" tenon. This usually isn't an issue in mortise and tenon work so I think the difference is negligible if you can cut an accurate joint. Good luck
