I've made many bread boxes and generally used Elmers white 'school' glue. We still have the oldest one I made over 25 years ago and still it's doing fine. I did use 'Sobo' glue on some. Can find that at any cloth store.
*I did one a few years ago with hide glue, seems to be holding up well. I figured either me or some future restorer would appreciate something easy to remove and redo. The longer setup time helps too. I built a plywood jig with rabbeted screw-down cleats to hold all the slats in alignment during glueup. Worked like a charm. Good luck.
