Sunflower board isn't a plywood, it is a flakeboard made from sunflower stalks. If you Google it you can find manufacturer's websites that will give you photos and technical information.
As a practical matter, in my limited experience with one brand, it works and has mechanical properties similar to particle board, which is to say it isn't as strong as plywood and won't hold fasteners as well.

Sounds a bit like Dakota Burl. From http://www.dwellsmart.com/Products/Lumber-and-Wood-Products/Dakota-Burl:
"Dakota Burl¯ composite is a unique bio-based material, which exhibits the beauty and elegance of traditional burled woods. The material is created from an agricultural fiber, sunflower hulls, making this a beautiful environmental option to hardwood."

Actually I was presuming that the board was made out of stalks, it may be the sunflower board is only made from the seed hulls.John White

Chris I looked at that site. Green vs $green $190 a sheet WTF. I bought a bunch of "wheat board" for my kitchen cabinets made outside of Winnipeg $40 a sheet. From that pic on the site I have a hard time trying to see it looks like a burl? You can see some hulls and seeds and it finished well. Not as toxic as MDF, smelled like an old straw broom when cutting it. I believe Dow bought them out a few years ago. I remember driving by the plant and they had mountians of huge bales, overhead cranes, not a small operation.
