I want to take 8/4 ash, rip it into 1″ strips , glue the strips together
(face to face) to make a panel that has a finished dimension of 12″ wide by 28″ long and 7/8″ thick !
so I am wondering about the dimensional stability of such a door(2 doors actually). Its ok if they have a little lateral movement , but it’s not ok if they cup! that’s my real concern.

If the strips, when they are glued up, will create the equivalent of a solid quarter sawn panel then you will have a stable panel that isn't likely to cup and will have the least possible expansion. If the glued up panel will have the grain orientation of a flat sawn board there will be some possible cupping and greater movement with humidity changes.
To minimize the cupping in a panel glued up from flat sawn boards you should alternate the ring pattern with each board, this will create at most a slight ripple in the panel if the individual boards cup.
