Real quick guys…..
8 foot by 4 foot maple and Jatoba fire station table with padouk, Wenge, and purpleheart inlays. Seven grown firemen will be using this table 365 days per year. What finish should I use?……
System Three (Bar Coat-self leveling finish)
Wipe on Poly, wet sand, wax, etc
or
have a pro spray a finish on it for me?

It's not really my area, but I'd think that a good sprayed conversion varnish coating would be about the most durable coating for such a table top. With the top ready to finish--clean, smooth and evenly sanded, I can't imagine you not being able to find a pro to finish it for the firehouse at little more than the cost of the materials, particularly if you don't need it yesterday.
Barring that, I'd seal with a couple of light coats of dewaxed shellac, and then top coat with about three coats of a good polyurethane varnish. (This is one of the few places polyurethane varnish makes sense.)
You might try the clear Interlux Perfection -- it's a two-part polyurethane made to be applied by hand (tipped off roller, a two person task). Interlux has extensive and DETAILED application instructions that should be thoroughly read and followed to the letter.
