In finishing cherry with linseed oil and varnish sometimes I get a splotchy effect. Can I use a shellac sealer to minimize this? Will the sealer ruin the penetration of the oil?

If you apply the shellac first, it will inhibit the penetration of the oil.
When you apply your oil, try using it very sparingly; just enough to add a little color as opposed to flooding it.
The other option is to skip the oil and just use shellac and then varnish.
One mans splotch is another mans curl. It's just one of the basic characteristics of cherry.
